Vegetable and Chickpea Flatbread with Olive Tapenade
This vegetable and chickpea flatbread is a quick and easy meal that's perfect for a weeknight dinner. The dough is made with whole-wheat flour, baking powder, salt, water, and olive oil, and it's rolled out into a 12-inch circle. The flatbread is then topped with chopped vegetables, cooked chickpeas, and olive tapenade, and baked until the crust is golden brown and the vegetables are tender.
The inspiration for this recipe came to me one night when I was trying to figure out what to make for dinner. I had some leftover vegetables in the fridge, and I wanted to use them up. I also had some cooked chickpeas and olive tapenade on hand, so I decided to throw them all together on a flatbread. The result was a delicious and satisfying meal that was ready in under 30 minutes.

Why It Works
  • The whole-wheat flour gives the flatbread a hearty and flavorful crust.
  • The baking powder helps the flatbread to rise and become fluffy.
  • The olive oil adds moisture and flavor to the dough.
  • The chopped vegetables add color, texture, and nutrients to the flatbread.
  • The cooked chickpeas add protein and fiber to the flatbread.
  • The olive tapenade adds a salty and briny flavor to the flatbread.
