Ingredients
  • 1 1/2 cups uncooked long-grain brown rice
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. In a large saucepan or Dutch oven over medium heat, add the olive oil.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the bell peppers and garlic and cook until softened, about 5 minutes more.
  4. Stir in the rice, cumin, oregano, salt, and black pepper.
  5. Cook for 1 minute to toast the rice.
  6. Add the tomato sauce and 2 cups of water.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes.
  8. Remove from heat and let stand, covered, for 5 minutes before serving.
