The Croque Monsieur is a classic French sandwich that's perfect for a quick and easy lunch or dinner. It's made with ham, cheese, and béchamel sauce, and it's typically served with a side of fries. Our version of the Croque Monsieur is a little bit different, but it's just as delicious. We use provolone cheese instead of ham, and we make our béchamel sauce with milk instead of cream. The result is a sandwich that's cheesy, creamy, and absolutely delicious.

Ingredients
1 loaf (1 pound) French bread, cut into 12 (1/2-inch-thick) slices
1/4 cup unsalted butter, softened
2 tablespoons Dijon mustard
1/4 cup all-purpose flour
3 cups milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 pound sliced provolone cheese
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Spread butter on one side of each bread slice.
Spread mustard on the other side of 6 bread slices.
Top each mustard-spread slice with a slice of cheese.
Top with the remaining bread slices, buttered side up.
In a saucepan, melt butter over medium heat.
Whisk in flour and cook for 1 minute.
Gradually whisk in milk, salt and pepper. Bring to a boil, then reduce heat and simmer for 5 minutes, or until thickened.
Why It Works
The provolone cheese melts perfectly and gives the sandwich a nice gooey texture.
The béchamel sauce is made with milk instead of cream, which makes it lighter and less rich.
The bread is toasted in the oven, which gives it a nice crispy texture.
