Ingredients
  • 2 lbs boneless, skinless chicken breasts, cut into chunks
  • 2 jalapenos, seeded and diced
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 2 tbsp coconut aminos
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper, to taste
Instructions
  1. In a large bowl, combine the chicken, jalapenos, cilantro, garlic, coconut aminos, olive oil, cumin, paprika, salt, and pepper. Toss until the chicken is evenly coated.
  2. Cover and marinate in the refrigerator for at least 30 minutes, or up to overnight.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers.
  4. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
  5. Remove from the grill and let rest for a few minutes before serving.
