These healthy breakfast burritos are the perfect way to start your day. They're packed with protein and fiber, and they're easy to make ahead of time. Simply assemble the burritos in the morning and then bake them in the oven until golden brown. You can also freeze the burritos for later. When you're ready to eat, just reheat them in the oven or microwave.
I've always been a fan of breakfast burritos, but I've never been a fan of the greasy, heavy versions that are typically served at restaurants. So I decided to create my own healthy version that's just as delicious, but much better for you.

Ingredients
  • 12 whole-wheat tortillas
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 12 eggs
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Spread tortillas on a baking sheet and bake for 5 minutes per side, or until golden brown.
  3. In a large skillet, cook black beans, bell peppers, and onion over medium heat until softened.
  4. In a separate skillet, cook eggs until cooked through.
  5. To assemble burritos, place a tortilla on a plate and top with black bean mixture, eggs, cheese, salt, and pepper.
  6. Roll up burritos and serve.
