Ingredients
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can corn
  • 1 (15-ounce) can diced tomatoes (undrained)
  • 1 green bell pepper, chopped
  • 1 red onion, chopped
  • 1 cup cooked brown rice
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup shredded cheddar cheese
Instructions
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the black beans, corn, tomatoes, bell pepper, and onion to the skillet and cook, stirring occasionally.
  3. Stir in the taco seasoning and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15 minutes, or until the vegetables are tender.
  5. Meanwhile, cook the brown rice according to package directions.
  6. To assemble the burritos, spoon 1/2 cup of the vegetable mixture into the center of a tortilla.
  7. Top with 1/4 cup of the brown rice and 1/4 cup of the shredded cheese.
  8. Roll the tortilla up tightly and serve immediately.
