Vegetable and Bean Burritos with Brown Rice

Ingredients
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (15-ounce) can corn
- 1 (15-ounce) can diced tomatoes (undrained)
- 1 green bell pepper, chopped
- 1 red onion, chopped
- 1 cup cooked brown rice
- 1 packet (1 ounce) taco seasoning
- 1/2 cup shredded cheddar cheese
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the black beans, corn, tomatoes, bell pepper, and onion to the skillet and cook, stirring occasionally.
- Stir in the taco seasoning and bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes, or until the vegetables are tender.
- Meanwhile, cook the brown rice according to package directions.
- To assemble the burritos, spoon 1/2 cup of the vegetable mixture into the center of a tortilla.
- Top with 1/4 cup of the brown rice and 1/4 cup of the shredded cheese.
- Roll the tortilla up tightly and serve immediately.
