I added some chopped bell peppers and onion for color and flavor, and I seasoned the mixture with chili powder, cumin, and salt. The result was a delicious and satisfying meal that I've been making ever since.

Ingredients
  • 1 cup millet
  • 1 15 oz. can black beans, rinsed and drained
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
Instructions
  1. Cook the millet according to package directions.
  2. While the millet is cooking, heat a large skillet over medium heat.
  3. Add the black beans, bell peppers, onion, chili powder, cumin, and salt to the skillet.
  4. Cook until the vegetables are softened, about 10 minutes.
  5. Once the millet is cooked, add it to the skillet with the vegetables.
  6. Stir to combine and cook until heated through, about 5 minutes.
  7. Serve the millet and black bean mixture in bowls and top with your favorite toppings, such as salsa, guacamole, sour cream, or shredded cheese.
