Ingredients
  • 1 head of cauliflower, cut into florets

Instructions
  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, combine the cauliflower florets, olive oil, lemon juice, garlic, salt, and pepper. Toss to coat.
  3. Spread the cauliflower on a baking sheet and roast for 20-25 minutes, or until tender and browned.
  4. While the cauliflower is roasting, make the tahini sauce. In a small bowl, whisk together the tahini, lemon juice, and water until smooth.
  5. To serve, drizzle the tahini sauce over the roasted cauliflower.
  6. Garnish with chopped fresh parsley or cilantro, if desired.
