Ingredients
1 cup cooked chickpeas, rinsed and drained
1/2 cup honey
1/4 cup olive oil
1/4 cup almond flour
1/4 cup coconut flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a food processor, combine the chickpeas, honey, olive oil, almond flour, coconut flour, baking powder, cinnamon, and cardamom.
Process until a thick batter forms.
Drop the batter by rounded tablespoons onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12-15 minutes, or until the edges are golden brown.
Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
While the cookies are cooling, heat the remaining honey in a small saucepan over low heat. Bring to a simmer and let simmer for 2-3 minutes, or until the honey has thickened slightly.
Dip the tops of the cooled cookies into the honey and let the excess drip off.
