Ingredients
  • 1 cup cooked chickpeas, rinsed and drained
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
Instructions
  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a food processor, combine the chickpeas, honey, olive oil, almond flour, coconut flour, baking powder, cinnamon, and cardamom.
  3. Process until a thick batter forms.
  4. Drop the batter by rounded tablespoons onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 12-15 minutes, or until the edges are golden brown.
  6. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  7. While the cookies are cooling, heat the remaining honey in a small saucepan over low heat. Bring to a simmer and let simmer for 2-3 minutes, or until the honey has thickened slightly.
  8. Dip the tops of the cooled cookies into the honey and let the excess drip off.
