Ingredients
- eggs
- bell pepper
- onion
- cilantro
- salt
- pepper
- corn tortillas
- toppings of your choice
Instructions
- Heat a little oil in a skillet over medium heat.
- Add the bell pepper and onion and cook until softened
- Push the veggies to the side of the skillet and pour in the eggs.
- Season the eggs with salt and pepper and cook until fluffy.
- Warm the tortillas in the microwave or on a comal.
- Assemble the tacos by placing the eggs and veggies on the tortillas and adding your favorite toppings.
