Sweet Potato and Black Bean Burgers on Whole-Wheat Buns
These sweet potato and black bean burgers are a delicious and healthy alternative to traditional beef burgers. They're made with a combination of roasted sweet potatoes, black beans, onions, bell peppers, and spices, and they're held together with a simple binder of breadcrumbs and eggs. Ingredients
  • 1 medium sweet potato, peeled and cubed
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Place the sweet potato cubes on a baking sheet and roast for 20-25 minutes, or until tender.
  3. Meanwhile, in a large bowl, combine the black beans, onion, bell pepper, cilantro, cumin, chili powder, salt, and black pepper.
  4. Once the sweet potatoes are roasted, add them to the bowl and mash them with a fork.
  5. Form the mixture into 8 patties.
  6. Heat a large skillet over medium heat. Cook the patties for 4-5 minutes per side, or until browned.
  7. Serve the burgers on whole-wheat buns with your favorite toppings.
