Ingredients
  • 1 tbsp coconut oil
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 large carrot, chopped
  • 1 cup frozen peas
  • 1 cup vegetable broth
  • 1/2 tsp turmeric powder
  • 1/4 tsp saffron threads
Instructions
  1. Heat coconut oil in a large pot over medium heat.
  2. Add onion, bell pepper, carrot, and peas to the pot and cook until softened.
  3. Stir in turmeric and saffron.
  4. Add vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Season with salt and pepper to taste.
