Sweet Potato and Black Bean Tacos with Roasted Brussels Sprouts
These sweet potato and black bean tacos are a delicious and easy way to get your veggie fix. Ingredients
  • 1 large sweet potato, peeled and cubed
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 (6 inch) corn tortillas
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss sweet potatoes with olive oil, chili powder, cumin, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast in preheated oven for 20-25 minutes, or until tender.
  4. While sweet potatoes are roasting, heat a large skillet over medium heat.
  5. Add black beans to the skillet and cook for 5-7 minutes, or until heated through.
  6. Warm tortillas in the microwave or oven.
  7. Assemble tacos by filling tortillas with roasted sweet potatoes, black beans, and your favorite toppings.
