Ingredients
  • 1 cup dried lentils, rinsed and sorted
  • 4 cups vegetable broth
  • 1 large beetroot, peeled and grated
  • 1 large onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup quinoa, cooked
  • 1/2 cup walnuts, chopped
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a medium saucepan, bring the lentils and vegetable broth to a boil.
  3. Reduce heat, cover and simmer for 25 minutes, or until the lentils are tender.
  4. In a large bowl, combine the grated beetroot, onion, bell pepper, garlic, quinoa and walnuts.
  5. Add the cooked lentils and mix well.
  6. Transfer the mixture to a 9x13 inch baking dish.
  7. Bake for 30 minutes, or until the top is golden brown and the lentil loaf is set.
  8. Let cool slightly before slicing and serving.
