Ingredients
1 cup brown rice
2 cups water
3 carrots, peeled and cut into thin slices
3 cucumbers, peeled and cut into thin slices
3 avocados, peeled and cut into thin slices
1/2 cup red cabbage, shredded
1/2 cup soy sauce
2 tablespoons rice vinegar
2 tablespoons sesame oil
Instructions
Cook the brown rice according to package directions.
While the rice is cooking, prepare the vegetables.
Slice the carrots, cucumbers, avocados, and red cabbage into thin slices.
Combine the soy sauce, rice vinegar, and sesame oil in a small bowl.
Once the rice is cooked, stir in the soy sauce mixture and let cool slightly.
Place a bamboo rolling mat on a flat surface.
Place a sheet of plastic wrap on the mat.
Spread a thin layer of rice onto the plastic wrap, leaving a 1-inch border at the top.
Arrange the vegetables in a row in the center of the rice.
Starting at the bottom, roll up the sushi roll tightly, using the plastic wrap to help you.
Once the roll is formed, remove the plastic wrap and slice into bite-sized pieces.
