Vegetable Tempura with Spicy Sriracha Sauce

Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sparkling water
  • 1 cup vegetable oil, for frying
  • 1/2 pound broccoli florets
  • 1/2 pound cauliflower florets
  • 1/2 pound carrots, peeled and cut into 1-inch pieces
  • 1/2 pound zucchini, cut into 1-inch pieces
Instructions
  1. In a large bowl, whisk together the flour, baking powder, and salt.
  2. Gradually whisk in the sparkling water until a smooth batter forms.
  3. Heat the oil in a large pot or Dutch oven over medium heat.
  4. Dip the vegetables in the batter, then carefully add them to the hot oil.
  5. Fry the vegetables for 3-4 minutes, or until they are golden brown and crispy.
  6. Drain the vegetables on paper towels.
  7. Serve the tempura with the spicy sriracha sauce.
