Vegetable Tempura with Spicy Sriracha Sauce
A light and refreshing take on the classic Japanese dish, this tempura is made with a variety of vegetables, and served with a spicy sriracha sauce.

Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup sparkling water
- 1 cup vegetable oil, for frying
- 1/2 pound broccoli florets
- 1/2 pound cauliflower florets
- 1/2 pound carrots, peeled and cut into 1-inch pieces
- 1/2 pound zucchini, cut into 1-inch pieces
Instructions
- In a large bowl, whisk together the flour, baking powder, and salt.
- Gradually whisk in the sparkling water until a smooth batter forms.
- Heat the oil in a large pot or Dutch oven over medium heat.
- Dip the vegetables in the batter, then carefully add them to the hot oil.
- Fry the vegetables for 3-4 minutes, or until they are golden brown and crispy.
- Drain the vegetables on paper towels.
- Serve the tempura with the spicy sriracha sauce.
