A frittata is a great way to use up leftover vegetables. This recipe is for a broccoli-cheddar frittata, but you can use any vegetables you have on hand. Frittatas are also a great make-ahead breakfast or lunch.

Ingredients
1 tablespoon olive oil
1/2 onion, chopped
1 head of broccoli, chopped
1/2 cup shredded cheddar cheese
1/2 cup milk
2 eggs
1/4 teaspoon salt
1/4 teaspoon pepper
Instructions
Preheat oven to 350 degrees F (175 degrees C).
Heat olive oil in a large skillet over medium heat.
Add onion and broccoli to the skillet and cook until softened.
Stir in cheese, milk, eggs, salt, and pepper.
Pour mixture into a greased 9-inch pie plate.
Bake in preheated oven for 25-30 minutes, or until set.
