Roasted Butternut Squash and Kale Salad

Ingredients
  • 1 medium butternut squash, peeled and cubed
  • 1 bunch kale, chopped
  • 1/2 cup chopped red onion
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss butternut squash with olive oil, oregano, salt, and pepper.
  3. Spread squash on a baking sheet and roast for 20 minutes, or until tender and slightly browned.
  4. While squash is roasting, massage kale with olive oil.
  5. In a large bowl, combine kale, roasted squash, red onion, balsamic vinegar, and salt and pepper to taste.
  6. Toss to combine.
  7. Serve immediately or chill for later.
