The chickpeas provide protein and fiber, the spinach provides vitamins and minerals, and the pita bread provides a whole-wheat base. The combination of flavors and textures is irresistible, and the pita breads can be served as a main course or a side dish.
The inspiration for these chickpea and spinach stuffed pita breads came to me one day when I was trying to figure out what to make for dinner. I had some leftover chickpeas and spinach in the fridge, and I was looking for a way to use them up. I also had some pita bread on hand, and I thought it would be a good way to make a quick and easy meal. I started by sautéing the onions and bell peppers in some olive oil. Then I added the chickpeas, spinach, cilantro, cumin, salt, and pepper. I mixed everything together and cooked it until the spinach was wilted and the chickpeas were heated through. I then stuffed the mixture into the pita breads and baked them in the oven until they were golden brown. The pita breads were a hit with my family, and I've been making them ever since.
