Quinoa and Vegetable Curry with Roasted Peanuts

Ingredients
- 1 cup quinoa
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes with green chilies, undrained
Instructions
- Rinse the quinoa in a fine-mesh sieve until the water runs clear.
- Heat the olive oil in a large saucepan over medium heat.
- Add the onion, bell peppers, and cook until softened, about 5 minutes.
- Add the quinoa, black beans, corn, and tomatoes to the saucepan.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked through.
- Stir in the roasted peanuts and serve.
