Spiced Lentil and Avocado Tacos
These spiced lentil and avocado tacos are a quick and easy weeknight meal that's packed with flavor. The lentils are cooked in a flavorful broth with cumin, chili powder, salt, and pepper, then mashed and spooned into tortillas. I first developed this recipe when I was looking for a quick and easy weeknight meal that was also vegetarian. I had some lentils in my pantry, and I thought they would be a good base for a taco filling. I started by cooking the lentils in a flavorful broth with cumin, chili powder, salt, and pepper. Once the lentils were cooked, I mashed them with a fork until they were the consistency of refried beans. I then spooned the lentil mixture into tortillas and topped them with sliced avocado, pickled red onions, and my favorite taco toppings. The tacos were a hit with my family, and I've been making them ever since.

Ingredients
  • 1 cup dried lentils, rinsed and picked over
  • 2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 ripe avocado, sliced
  • 1/2 cup pickled red onions, drained
Instructions
  1. In a medium saucepan, combine the lentils, vegetable broth, cumin, chili powder, salt, and black pepper. Bring to a boil over medium heat, then reduce heat to low and simmer for 20-25 minutes, or until the lentils are tender and most of the liquid has been absorbed.
  2. While the lentils are cooking, slice the avocado and drain the pickled red onions.
  3. Once the lentils are cooked, remove from the heat and mash with a fork or potato masher until desired consistency is reached.
  4. To assemble the tacos, place a few spoonfuls of lentils in each tortilla. Top with avocado slices, pickled red onions, and your favorite taco toppings.
