Seasonal Vegetable and Lentil Tacos

Ingredients
  • 1 cup dried lentils
  • 2 cups vegetable broth
  • 1/2 onion, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1 cup corn kernels
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup chopped fresh cilantro
  • 12 corn tortillas
Instructions
  1. Rinse lentils and pick over to remove any debris.
  2. In a medium saucepan, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender.
  3. While lentils are cooking, heat a little oil in a large skillet over medium-high heat.
  4. Add onion, green bell pepper, and red bell pepper to the skillet and cook until softened, about 5 minutes.
  5. Add corn and black beans to the skillet and cook until heated through, about 2 minutes.
  6. Drain lentils and add them to the skillet.
  7. Stir in cilantro and cook for 1 minute more.
  8. Serve lentil mixture in tortillas with your favorite toppings.
