12 corn tortillas
Instructions
Rinse lentils and pick over to remove any debris.
In a medium saucepan, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender.
While lentils are cooking, heat a little oil in a large skillet over medium-high heat.

Add corn and black beans to the skillet and cook until heated through, about 2 minutes.
Drain lentils and add them to the skillet.
Stir in cilantro and cook for 1 minute more.
