Ingredients
  • 1 cup dried black beans
  • 1 large sweet potato

  • 1 avocado, sliced
Instructions
  1. Rinse the black beans and pick over to remove any stones or debris.
  2. Place the beans in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour, or until the beans are tender.
  3. While the beans are cooking, peel and cube the sweet potato.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Add the sweet potato to the skillet and cook until browned on all sides.
  6. Add the chili powder, cumin, salt, and black pepper to the skillet and cook for 1 minute more.
  7. Drain the black beans and add them to the skillet.
  8. Cook for 5 minutes more, or until the beans are heated through.
