Vegetable and Bean Burrito with Brown Rice
Our Vegetable and Bean Burrito with Brown Rice is the perfect easy weeknight meal. It's packed with flavor and nutrients, and it's so easy to make. Just cook up some brown rice, black beans, corn, bell pepper, and onion. Then, spread the rice in a large tortilla and top it with the beans, corn, bell pepper, onion, cilantro, salsa, and avocado. Roll up the tortilla tightly and cut it in half. Serve with additional salsa and guacamole, if desired.
The vegetable and bean burrito is a classic Tex-Mex dish that is typically made with refried beans, cheese, and ground beef. Our version of the burrito is a bit healthier, using brown rice instead of refried beans and adding in some fresh vegetables. The result is a burrito that is still packed with flavor, but is also lower in fat and calories.

  • The black beans add protein and fiber, and they also have a slightly sweet flavor that complements the other ingredients.
  • The corn adds a bit of sweetness and crunch to the burrito.
  • The bell pepper and onion add flavor and texture to the burrito.
  • The cilantro adds a fresh, herbaceous flavor to the burrito.
  • The salsa adds a bit of heat and spice to the burrito.
  • The avocado adds a creamy texture and richness to the burrito.
