Quinoa and Vegetable Fritters

Ingredients
  • 1 cup cooked quinoa
  • 1 cup chopped vegetables (such as carrots, celery, onions, or peppers)
  • 1/2 cup chickpea flour
  • 1/4 cup nutritional yeast
  • 1 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
Instructions
  1. In a large bowl, combine the quinoa, vegetables, chickpea flour, nutritional yeast, cumin, coriander, salt, and pepper.
  2. Mix well until all of the ingredients are evenly combined.
  3. Form the mixture into 8-10 patties.
  4. Heat the oil in a large skillet over medium heat.
  5. Add the patties to the skillet and cook for 3-4 minutes per side, or until they are golden brown and cooked through.
  6. Serve the fritters with your favorite dipping sauce.
