Quinoa and Vegetable Buddha Bowl Wrap

Ingredients
  • 1 cup cooked quinoa
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped zucchini
  • 1/2 cup chopped carrots

  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 2 whole-wheat tortillas
Instructions
  1. In a large bowl, combine the quinoa, bell pepper, zucchini, carrots, cucumber, red onion, and cilantro.
  2. In a small bowl, whisk together the tahini sauce ingredients.
  3. Spread half of the quinoa mixture onto each tortilla.
  4. Top with the tahini sauce.
  5. Fold the tortillas in half or wrap them up like a burrito.
