Green Pea and Potato Curry

Ingredients
  • 1 tablespoon coconut oil or extra-virgin olive oil
  • 1 medium yellow onion, small diced
  • 1 medium serrano or jalapeño pepper, minced
  • 1 teaspoon fine sea salt
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 (14 ounce) can full-fat coconut milk
Instructions
  1. Heat the oil in a medium saucepan over medium heat.
  2. Add the onion and serrano or jalapeño and cook, stirring often, until softened and just starting to brown, about 5 minutes.
  3. Add the salt, turmeric, coriander, and garam masala and cook, stirring constantly, until fragrant, about 30 seconds.
  4. Stir in the coconut milk and bring to a simmer. Add the potatoes and simmer, stirring occasionally, until the potatoes are tender and the sauce has thickened, about 15 minutes.
  5. Add the peas and cook for 5 minutes more.
  6. Taste and season with additional salt, if needed.
  7. Serve hot over rice or with flatbread.
