Ingredients
  • 1 cup dried chickpeas, soaked overnight
  • 1/2 cup chopped onion
  • 1/2 cup chopped parsley
  • 1/4 cup chopped cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 cup flour
Instructions
  1. Drain and rinse the chickpeas.
  2. Combine the chickpeas, onion, parsley, cilantro, cumin, coriander, salt, and flour in a food processor and pulse until combined but still slightly chunky.
  3. Form the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
  4. Bake at 400°F (200°C) for 15-20 minutes, or until golden brown.
  5. For the tzatziki sauce, combine 1 cup of Greek yogurt, 1/2 cup of chopped cucumber, 1 tablespoon of olive oil, 1 clove of minced garlic, and a pinch of salt and pepper in a bowl.
  6. Serve the falafel with the tzatziki sauce.
