Ingredients
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1 cup chopped zucchini
  • 1 cup chopped broccoli florets
  • 1/2 cup chopped avocado
  • 1 cup packed fresh spinach
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
Instructions
  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add onion and bell pepper and cook until softened about 5 minutes.
  3. Add zucchini and broccoli and cook until tender-crisp, about 3 minutes.
  4. Stir in avocado, spinach, cilantro, and mint.
  5. Cook until spinach is wilted and avocado is warmed through, about 1 minute.
  6. Season with salt and pepper to taste.
  7. Serve immediately.
