Ingredients
  • 1 sheet puff pastry, thawed
  • 1 tablespoon olive oil
  • 1/2 cup chopped zucchini
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped yellow squash
  • 1/4 cup chopped feta cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Unfold the puff pastry sheet on a lightly floured surface.
  3. Spread the olive oil over the puff pastry.
  4. Combine the zucchini, red bell pepper, yellow squash, feta cheese, salt, and pepper in a bowl.
  5. Spread the vegetable mixture over the puff pastry.
  6. Roll up the puff pastry from one long side to the other, starting with the long side closest to you.
  7. Cut the roll into 1-inch thick slices.
  8. Place the breadsticks on a baking sheet and bake for 15-20 minutes, or until golden brown.
