Basil-Balsamic Baba Ganoush with Pita Bread
A flavorful and creamy dip made from roasted eggplant, tahini, and fresh basil. It's perfect for a party or as a healthy snack.

Ingredients
- 1 medium eggplant
- 1/4 cup tahini
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1/4 cup chopped fresh basil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Pita bread, for serving
Instructions
- Preheat the oven to 400 degrees F (200 degrees C).
- Pierce the eggplant with a fork and roast in the oven for 45 minutes to 1 hour, or until tender.
- Remove the eggplant from the oven and let cool slightly.
- Cut the eggplant in half lengthwise and scoop out the flesh into a bowl.
- Add the tahini, olive oil, balsamic vinegar, basil, garlic, salt, and pepper to the eggplant flesh.
- Mash everything together until well combined.
- Taste and adjust seasonings as needed.
- Serve the baba ganoush with pita bread.
