Ingredients
  • 1 medium eggplant
  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Pita bread, for serving
Instructions
  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Pierce the eggplant with a fork and roast in the oven for 45 minutes to 1 hour, or until tender.
  3. Remove the eggplant from the oven and let cool slightly.
  4. Cut the eggplant in half lengthwise and scoop out the flesh into a bowl.
  5. Add the tahini, olive oil, balsamic vinegar, basil, garlic, salt, and pepper to the eggplant flesh.
  6. Mash everything together until well combined.
  7. Taste and adjust seasonings as needed.
  8. Serve the baba ganoush with pita bread.
