Ingredients

  • 1 head of broccoli, cut into florets
  • 1 cup sliced mushrooms
  • 1 (14-ounce) package extra-firm tofu, drained and pressed
Instructions
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion, garlic, and ginger and cook until the onion is softened, about 5 minutes.
  3. Add the bell pepper, broccoli, and mushrooms and cook until the vegetables are tender, about 10 minutes.
  4. Crumble the tofu into the skillet and cook until heated through, about 5 minutes.
  5. Stir in the soy sauce and cook for 1 minute more.
  6. Serve over rice or noodles.
