Ingredients
  • 1 cup quinoa
  • 2 cups water
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped avocado
  • 1/4 cup chopped cilantro
  • 1/4 cup shredded cheese
Instructions
  1. Rinse the quinoa in a fine-mesh sieve.
  2. In a medium saucepan, combine the quinoa and water and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked through and the water has been absorbed.
  4. While the quinoa is cooking, prepare the other ingredients.
  5. In a large bowl, combine the black beans, onion, bell peppers, avocado, cilantro, and cheese.
  6. Once the quinoa is cooked, fluff it with a fork and add it to the bowl with the other ingredients.
  7. Stir to combine and serve.
