This creamy parsnip and apple puree is a delicious and nutritious way to get your daily dose of vegetables. The parsnips provide a sweet and earthy flavor, while the apples add a touch of brightness and acidity. The puree is also thickened with nutritional yeast, which adds a cheesy flavor and a boost of protein. This puree is perfect as a side dish or as a base for a soup or sauce.
I first came up with the idea for this puree when I was looking for a way to use up some leftover parsnips. I had roasted them for a weeknight dinner, but I had a few left over that I didn't want to go to waste. I decided to try pureeing them with some apples and vegetable broth, and the results were amazing! The puree was creamy and smooth, with a delicious sweet and savory flavor. I've been making this puree ever since, and it's become a favorite of mine and my family.

Why It Works
