Ingredients
  • 2 lbs chicken thighs
  • 1 can (14 oz) full-fat coconut milk
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1 tbsp turmeric powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish
Instructions
  1. Season the chicken thighs with salt, pepper, turmeric, cumin, and paprika.
  2. In a large skillet, heat some oil over medium-high heat.
  3. Add the chicken thighs and brown on both sides, then remove from the skillet.
  4. In the same skillet, sauté the onion, garlic, and ginger until softened and fragrant.
  5. Pour in the coconut milk and stir to combine with the aromatics.
  6. Return the chicken thighs to the skillet, cover, and simmer over low heat for about 30 minutes or until the chicken is cooked through.
  7. Garnish with fresh cilantro before serving.
