This teriyaki-glazed salmon with edamame is a quick and easy weeknight meal that's packed with flavor. The salmon is cooked in a sweet and savory teriyaki sauce, and the edamame adds a pop of color and a bit of extra protein. Best of all, this dish can be on the table in under 30 minutes.
The inspiration for this recipe came from a trip to Japan that I took a few years ago. I was particularly impressed by the way that the Japanese people cooked salmon. They would often glaze the salmon in a sweet and savory sauce, and then cook it over a high heat until the skin was crispy and the flesh was cooked through. I decided to try to recreate this dish at home, and the result was this teriyaki-glazed salmon with edamame.
Prep time: 10 | Cook time: 20 | Serves: 4
Ingredients
1 pound salmon fillet, skin-on
1/4 cup teriyaki sauce
1 tablespoon olive oil
1 cup frozen edamame
1/4 cup chopped green onions
1 tablespoon sesame seeds
1 teaspoon minced garlic
Salt and pepper to taste
Instructions
Preheat the oven to 400 degrees F (200 degrees C).
Line a baking sheet with parchment paper.
Place the salmon fillet on the prepared baking sheet.
In a small bowl, whisk together the teriyaki sauce, olive oil, edamame, green onions, sesame seeds, garlic, salt, and pepper.
Brush the salmon fillet with the teriyaki mixture.
Bake for 15-20 minutes, or until the salmon is cooked through.
Serve immediately.
Why It Works
The teriyaki sauce is made with a combination of soy sauce, mirin, and sake, which gives it a deep and complex flavor.
The salmon is cooked over a high heat, which helps to create a crispy skin and a moist, flaky interior.
The edamame adds a pop of color and a bit of extra protein to the dish.
