Teriyaki-Glazed Salmon with Edamame
This teriyaki-glazed salmon with edamame is a quick and easy weeknight meal that's packed with flavor. The salmon is cooked in a sweet and savory teriyaki sauce, and the edamame adds a pop of color and a bit of extra protein. Best of all, this dish can be on the table in under 30 minutes.
The inspiration for this recipe came from a trip to Japan that I took a few years ago. I was particularly impressed by the way that the Japanese people cooked salmon. They would often glaze the salmon in a sweet and savory sauce, and then cook it over a high heat until the skin was crispy and the flesh was cooked through. I decided to try to recreate this dish at home, and the result was this teriyaki-glazed salmon with edamame.

Ingredients
  • 1 pound salmon fillet, skin-on
  • 1/4 cup teriyaki sauce
  • 1 tablespoon olive oil
  • 1 cup frozen edamame
  • 1/4 cup chopped green onions
  • 1 tablespoon sesame seeds
  • 1 teaspoon minced garlic
  • Salt and pepper to taste
Instructions
  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Line a baking sheet with parchment paper.
  3. Place the salmon fillet on the prepared baking sheet.
  4. In a small bowl, whisk together the teriyaki sauce, olive oil, edamame, green onions, sesame seeds, garlic, salt, and pepper.
  5. Brush the salmon fillet with the teriyaki mixture.
  6. Bake for 15-20 minutes, or until the salmon is cooked through.
  7. Serve immediately.
Why It Works
  • The teriyaki sauce is made with a combination of soy sauce, mirin, and sake, which gives it a deep and complex flavor.
  • The salmon is cooked over a high heat, which helps to create a crispy skin and a moist, flaky interior.
  • The edamame adds a pop of color and a bit of extra protein to the dish.
