Ingredients
1 large beetroot, peeled and cubed
1 ripe avocado, peeled and sliced
1/2 cup crumbled feta cheese
1/4 cup chopped walnuts
1/4 cup chopped fresh parsley
1/4 cup olive oil
2 tablespoons lemon juice
Salt and black pepper to taste
Instructions
Preheat oven to 400°F (200°C).
Toss beetroot with olive oil, salt, and pepper.
Roast for 20-25 minutes, or until tender.
Meanwhile, in a large bowl, combine avocado, feta cheese, walnuts, parsley, lemon juice, salt, and pepper.
