Ingredients
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon coconut oil
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup chopped broccoli florets
  • 1 cup chopped carrots
  • 1/2 cup roasted peanuts
  • 1 (14 ounce) can coconut milk
Instructions
  1. Rinse the quinoa in a fine-mesh sieve until the water runs clear.
  2. In a medium saucepan, bring the vegetable broth to a boil.
  3. Add the quinoa to the boiling broth, reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the liquid has been absorbed.
  4. While the quinoa is cooking, heat the coconut oil in a large skillet over medium heat.
  5. Add the onion and cook until softened, about 5 minutes.
  6. Add the bell pepper, zucchini, broccoli, carrots, and peanuts to the skillet and cook until softened, about 5 minutes longer.
  7. Stir in the coconut milk and bring to a simmer.
  8. Reduce heat to low, cover, and simmer for 10 minutes, or until the vegetables are tender and the sauce has thickened.
