Szechuan-Spiced Shrimp with Lo Mein
This Szechuan-spiced shrimp with lo mein noodles is a flavorful and easy-to-make dish that is perfect for a quick weeknight meal. The shrimp is coated in a flavorful blend of Szechuan peppercorns, cumin, coriander, and salt, then cooked until cooked through. The shrimp is then added to a skillet with onion and bell pepper and cooked until softened. The dish is served over lo mein noodles.
This recipe was inspired by a dish that I had at a restaurant in Chengdu, China. The shrimp was so flavorful and the lo mein noodles were the perfect accompaniment. I decided to recreate the dish at home, and I am so glad I did. This dish is now one of my favorites, and I make it all the time.

Ingredients
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons Szechuan peppercorns
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1/2 cup onion, chopped
  • 1/2 cup green bell pepper, chopped
Instructions
  1. In a small bowl, combine the shrimp, Szechuan peppercorns, cumin, coriander, and salt. Toss to coat.
  2. Heat the oil in a large skillet over medium heat.
  3. Add the shrimp and cook for 2-3 minutes per side, or until cooked through.
  4. Remove the shrimp from the skillet and set aside.
  5. Add the onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  6. Return the shrimp to the skillet and cook for an additional minute, or until heated through.
  7. Serve over lo mein noodles.
