Quinoa and Kale's Vibrant Vitality

Ingredients
  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 bunch kale, chopped
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
Instructions
  1. Rinse the quinoa in a fine-mesh sieve.
  2. Combine the quinoa and water or broth in a medium saucepan and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked through and the liquid has been absorbed.
  4. While the quinoa is cooking, prepare the vegetables.
  5. In a large bowl, combine the kale, red onion, cilantro, and parsley.
  6. Once the quinoa is cooked, fluff it with a fork and add it to the bowl with the vegetables.
  7. Drizzle with olive oil and lemon juice and toss to coat.
  8. Season with salt and pepper to taste.
