Garlicky Lemon Herb Quinoa Salad

Ingredients
  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste
Instructions
  1. In a medium saucepan, bring the water to a boil.
  2. Add the quinoa to the boiling water, reduce heat to low, cover, and simmer for 15-20 minutes until all the water is absorbed.
  3. In a small bowl, whisk together the lemon juice, olive oil, garlic, salt, and pepper.
  4. Fluff the quinoa with a fork and transfer to a large mixing bowl.
  5. Pour the lemon herb dressing over the quinoa and toss to combine.
  6. Add the fresh herbs and mix well.
  7. Adjust seasoning with salt and pepper if needed.
  8. Chill in the fridge for at least 30 minutes before serving.
