I first came up with this recipe when I was looking for a healthy and satisfying salad to eat for lunch. I wanted something that was packed with nutrients, but also something that was flavorful and satisfying. I started with a base of quinoa and kale, then added chickpeas, cranberries, almonds, and feta cheese. I finished it off with a lemon-tahini dressing, and the result was a salad that was both healthy and delicious.
