Tikka Masala-Inspired Swordfish with Basmati Rice

Ingredients
  • 1 pound swordfish steaks, cut into 1-inch pieces
  • 1/2 cup plain coconut yogurt
  • 1/4 cup tikka masala spice blend
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1 (15-ounce) can diced tomatoes
  • 2 cups cooked basmati rice
Instructions
  1. In a medium bowl, combine the swordfish, yogurt, tikka masala spice blend, and olive oil. Toss to coat.
  2. Heat a grill or grill pan over medium-high heat. Add the swordfish and cook for 5-7 minutes per side, or until cooked through.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and red bell pepper and cook until softened, about 5 minutes.
  4. Add the diced tomatoes to the skillet and bring to a simmer. Cook for 10 minutes, or until the sauce has thickened.
  5. Add the cooked swordfish to the skillet and stir to combine.
  6. Serve the tikka masala-inspired swordfish over basmati rice.
