Ingredients
  • 1 cup millet
  • 2 cups water

  • 1 celery stalk, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
Instructions
  1. Rinse the millet in a fine-mesh sieve.
  2. In a medium saucepan, combine the millet, water, and olive oil. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  3. While the millet is cooking, heat the olive oil in a large skillet over medium heat.
  4. Add the onion, carrot, celery, green bell pepper, and red bell pepper to the skillet and cook until softened, about 5 minutes.
  5. Add the cooked vegetables to the millet and stir to combine.
  6. Cover and cook for an additional 5 minutes, or until the millet is cooked through.
