Refreshing Cucumber and Mint Salad
This refreshing cucumber and mint salad is the perfect way to cool down on a hot summer day. The cucumber is crisp and refreshing, the mint is cool and aromatic, and the red onion adds a bit of sharpness. The salad is dressed with a simple vinaigrette made with rice vinegar, olive oil, sugar, salt, and pepper. The salad is best served chilled, and can be made ahead of time.
This recipe was inspired by a salad I had at a restaurant in Thailand. The salad was so refreshing and flavorful, I knew I had to recreate it at home. I experimented with different ingredients and proportions until I came up with this recipe. I think it's the perfect balance of flavors and textures, and it's now one of my favorite summer salads.
