Baked Oatmeal with Apples, Cinnamon, and Pecans
This baked oatmeal is a hearty and flavorful breakfast or brunch dish that's perfect for a cold morning. The oats are cooked in a mixture of almond milk and water, and then topped with chopped apples, pecans, cinnamon, and nutmeg. The oatmeal is baked until it's set and the apples are soft, and then it's let cool for a few minutes before serving.
I first had baked oatmeal at a bed and breakfast in Vermont. It was a cold, snowy morning, and the oatmeal was the perfect way to warm up. I loved the combination of the soft, chewy oatmeal, the sweet apples, and the crunchy pecans. I've been making baked oatmeal ever since, and it's become one of my favorite breakfast recipes.
