Lentil and Veggie Burgers

Ingredients
  • 1 cup dried brown lentils
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1/2 cup chopped onion
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1 egg
Instructions
  1. Rinse the lentils and pick over them to remove any stones or debris.
  2. In a large bowl, combine the lentils, carrots, celery, onion, bell pepper, parsley, cilantro, and egg.
  3. Mash the mixture together until it is well combined.
  4. Form the mixture into 8 patties.
  5. Heat a large skillet over medium heat.
  6. Cook the patties for 5-7 minutes per side, or until browned and cooked through.
  7. Serve the burgers on buns with your favorite toppings.
