Ingredients
1 cup whole-wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 ripe banana, mashed
1 cup unsweetened almond milk
1 large egg
1/4 cup chia seeds
1 tablespoon pure maple syrup
1/4 cup water
Instructions
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
In a separate bowl, whisk together the mashed banana, almond milk, and egg.
Add the wet ingredients to the dry ingredients and whisk until just combined.
Heat a lightly oiled griddle over medium heat.
Pour 1/4 cup of batter onto the hot griddle for each pancake.
Cook for 2-3 minutes per side, or until golden brown.
While the pancakes are cooking, prepare the chia seed syrup by combining the chia seeds, maple syrup, and water in a small saucepan.
