Ingredients
  • 1 cup whole-wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 ripe banana, mashed
  • 1 cup unsweetened almond milk
  • 1 large egg
  • 1/4 cup chia seeds
  • 1 tablespoon pure maple syrup
  • 1/4 cup water
Instructions
  1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the mashed banana, almond milk, and egg.
  3. Add the wet ingredients to the dry ingredients and whisk until just combined.
  4. Heat a lightly oiled griddle over medium heat.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown.
  7. While the pancakes are cooking, prepare the chia seed syrup by combining the chia seeds, maple syrup, and water in a small saucepan.
  8. Bring to a boil, then reduce heat and simmer for 5 minutes, or until thickened.
