Ingredients
1 (14-ounce) package extra-firm tofu, drained and pressed
1 tablespoon neutral oil
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/4 cup chopped fresh cilantro
1 teaspoon chili powder
1/4 teaspoon cumin
1/4 teaspoon salt
Instructions
Crumble the tofu into a large skillet over medium heat. Cook, stirring occasionally, until the tofu is golden brown and heated through, about 10 minutes.
Add the oil, onion, green bell pepper, red bell pepper, cilantro, chili powder, cumin, and salt to the skillet. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
Serve the tofu scramble with your favorite toppings, such as salsa, hot sauce, or avocado slices.
