Ingredients
  • 12 large mushrooms
  • 1 cup quinoa, cooked
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped zucchini
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Remove the stems from the mushrooms and finely chop them.
  3. In a large bowl, combine the quinoa, mushrooms, onion, red bell pepper, zucchini, cilantro, cumin, salt, and black pepper.
  4. Stuff the mushroom caps with the quinoa mixture.
  5. Place the mushrooms on a baking sheet and bake for 20-25 minutes, or until the mushrooms are soft and the quinoa is cooked through.
  6. Serve immediately.
